Turkey Sausage Rotini Pasta

- 2 Turkey Sausages One package usually comes with 2 sausages
- 1/2 Green Bell Pepper
- 1/2 Red Onion
- 3 Medium Sized Potatoes
- 2-4 Cloves of Garlic
- 2/3 Box of Tri-Color Rotini Pasta
- 1 Small Package of Mozzarella Cheese
- 1 Large can of diced tomatoes
- Salt & Pepper
Put the water to boil for your pasta. Add a pinch of salt and a tiny bit of oil. I used the MSR Gear WindBurner Stock Pot cause it has a drain system on the lid making it easier to drain your water once the pasta is done.
Dice up all of your vegetables (onions, peppers, and potatoes). Once diced, you can place them in your Sauce Pot till the pasta is made. Add some salt and pepper to it along with your can of diced tomatoes.
Cut your turkey sausage in four. I used only one pack of turkey sausage which comes with two turkey sausages in them. I cut each one in half and then half again longways. Then sliced. Once cut place them in your Ceramic Skillet. You can add a hint of salt.
Once your water comes to a boil, add about 1/2 of the pasta box to your water. This may happen while you are cutting your vegetables or sausage. You can also add the full box depending on how much you are wanting to make. Half a box was good enough for my family of 4 and we still had left overs.
Once the pasta is tender you can drain it. Make sure to follow LNT principles when draining your water.
Set your pasta to the side in the pot covered and start cooking your vegetables. Once your potatoes are tender you can remove from the burner and set aside in the pot covered. If you want more juice to your pasta you can add about half cup of filtered water to it. Don’t forget to add garlic, salt and pepper to your vegetables as you cook and stir occasionally. I usually add about 2 to 3 tablespoons of garlic which is about 4 pressed garlic cloves. Add according to your desire.
Once your vegetables are done you can start doing your sausage. Cook on the skillet while stirring occasionally. As the turkey sausage is cooking you can add the vegetables in with your pasta and stir it all together. You can add cheese to it so it can start melting.
When your turkey sausage is done being cooked, remove from burner, place the pasta with vegetables on the burner, and add the turkey sausage to your pasta. Stir for about two to three minutes and remove from burner.
Serve and eat. Leave pasta covered with lid so it stays juicy.
